Golden Cheese Soup

3 c. chopped potatoes
1 c. water
1/2 c. celery slices
1/2 c. carrot slices
1/4 c. chopped onion
1 tsp. parsley flakes
1 chicken bouillon cube
1/2 tsp. salt
dash of pepper
1 1/2 c. milk
2 Tbsp. flour
1/2 lb. Velveeta, cubed

In large saucepan, combine potatoes, water, celery, carrots, onion, parsley flakes, bouillon cube and seasonings. Mix well. Cover and simmer 15-20 minutes. Gradually add milk to flour, mixing until well blended. Add milk mixture to veggies. Cook until thickened. Add cheese and stir until melted.

My mom's recipe...excellent in the winter.

Pizza Rolls

2 cans crescent rolls
1 egg, separated
3/4 cup mozzarella cheese
3/4 cup pepperoni-chopped
Pizza sauce

Preheat oven to 350 degrees. Mix cheese, egg yolk, and pepperoni together. Open crescent rolls and press 2 triangles together to make a square (8 squares total). Spread mixture onto each square. Roll up and brush with egg whites. Cut each roll into 4 pieces. Bake for 15 minutes or until golden brown.
Serve with warm pizza sauce.
Makes 32 rolls.

This is a very easy, very delicious snack or appetizer. Similar to the pepperoni rolls you can get at Old Chicago

Yay Mindy!!

You are so talented Miss Hodson!! This is very exciting! With all the craziness of ending the school year, Donny's graduation, and all the wedding and house stuff I don't think that I'll be able to post until after next week. I'll definately get some things put up after Memorial Day though.

Still no word on the house...hopefully any day now!!

Smoked Chicken Salad With Raspberry Vinaigrette

Ingredients:
  • 1/2 c. seedless raspberry jam
  • 1/2 c. olive oil
  • 1 1/2 c. balsamic vinegar
  • 1 1/2 # boneless smoked chicken breast (cut into think strips)
  • 12 c. mesclun mix or baby summer leaves
  • 4 c. fresh raspberries
  • 1/2 c. toasted sliced almonds
Prep Time: 20 minutes
Serves: 8

1) For vinaigrette, combine jam, olive oil & balsamic vinegar in screw top jar; shake well.
2) Toss chicken with dressing in a large bowl. Line large platter or bowl with lettuces. Top with chicken salad, raspberries & almonds.

I made this for my family on Mother's Day. It was a big hit. (Super easy and delicious!) I used grilled chicken instead of smoked. I also only used 1/2 cup balsamic vinegar, and it tasted fine.

Finals week is hell! I have two more in-class tomorrow, and two take homes due Friday. But I decided it would be much more beneficial to me to take a break and make this blog for us. That way we can not only become domestic goddesses through sharing our recipes, but we can keep up with each other's lives. -----Mindy
