Ingredients
Salsa:
*8 oz. can crushed pineapple, drained
*15 oz. can rinsed & drained black beans
*2 Tbsp. lime juice
*1/2 tsp. each salt & pepper
*1/2 c. chopped red onion
*1 chopped plum tomato
*2 cloves finely minced garlic
Chicken:
*4 chicken breasts (flattened to even thickness)
*1 tsp. Tabasco sauce
*1 Tbsp. brown sugar
*1/2 tsp. garlic powder
*1/2 tsp. each salt & pepper
Combine salsa ingredients & let sit at room temperature for 15 minutes & then place in refrigerator. In small bowl mix together Tabasco, brown sugar, garlic powder, salt & pepper; spread over both sides of chicken. Grill or broil for10 minutes or until done, turning once. Serve chicken with salsa.
Healthy, fun, and delicious. Adam and I made this together. It was an excuse for him to use his grill. =) I think it is always a plus to cook with a partner.

Pomegranate Lemonade
This is really easy and really good!! The proportions are as follows for whatever size drink you're looking for.
1/3 pomegranate juice
2/3 soda water
spoonful of Crystal Lite pink lemonade (to taste)
This is really refreshing, and I'm sure that we can all think of a few choice mixers that might be good additions!
Boston is a trip so far... it's really fun, but a real challenge to be so far from everyone I know and love and everything familiar. I'll keep you all updated once I have time to do something fun!
